Mixed Fruit Juice

This mixed fruit juice is pure nostalgia for me. Growing up in a small town in India called Sonipat, my favourite part of a shopping trip with my mum was our stop at a little juice stall in the local market, Kachey Quarter. There was an uncle who owned the shop, and he would make this fresh, vibrant juice right in front of us — a refreshing reward after weaving through the busy, colourful lanes and hopping from shop to shop. Every sip still takes me right back to those childhood afternoons.

Ingredients
1 medium beetroot
225 grams baby carrots
½ medium sized apple
1 small cucumber
2 oranges
8 grams ginger
10 grams cilantro
¾ tsp rock salt or himalayan salt

Instructions
Cut all the fruits/vegetables into halves and add them into the juicer for juicing. I use a cold press juicer. You can use whichever kind of juicer you have. If you are using a juicer with a shoot, you might have to chop your fruits/vegetables into smaller chunks.
Stir in the rock salt after juicing.
Serve immediately and enjoy!

Notes
This juice is best enjoyed fresh.
You can adjust salt or add a splash of lemon juice for brightness.
