Zucchini stir-fried with onions and Indian Spices

Zucchini is an underrated vegetable in my opinion and often goes unacknowledged in soups and such. I am cooking or rather sautéing it here with onions and a bunch of Indian spices. It makes for an excellent side dish/ accompaniment with daal and rice . You can also eat it with roti or paratha.

Serves: 2-3 persons

Prep Time: 20 minutes

Ingredients

  • 2 zucchinis (about 450 g), cut into small bite-sized pieces

  • 1 medium onion, finely chopped

  • 1-inch piece ginger, minced

  • 1/8 cup olive oil

  • 1 tsp mustard seeds

  • 8 curry leaves

  • 2 tsp coriander powder

  • 1 tsp garam masala

  • ½ tsp red chilli powder

  • ½ tsp lemon juice

  • Salt, to taste

Instructions

  1. Chop zucchini and onion; set aside.

  2. Heat olive oil in a large pan over medium heat. Add minced ginger and cook for 30 seconds.

  3. Add mustard seeds and wait for them to crackle. Add curry leaves and fry briefly.

  4. Add onions and sauté for 5 minutes.

  5. Add zucchini, coriander powder, garam masala, and red chilli powder. Cook on high heat for 6–7 minutes.

  6. Remove from heat. Stir in salt and lemon juice. Mix well.

  7. Serve warm with bread like roti or paratha.

Notes

  • Adjust chilli powder according to your spice tolerance.

  • Great as a side dish or light meal.
