Indian inspired Corn Salad

Time: 15–20 minutes

Ingredients

  • ¾ cup boiled sweet corn (frozen or fresh)

  • ¼ cup cherry tomatoes, diced

  • 1.5 tbsp onions, diced

  • ¼ cup cucumber, diced

  • 1.5 tbsp red bell peppers, diced

  • Cilantro, finely chopped (to taste)

  • ¼ tsp roasted cumin powder

  • ½ tsp chaat masala (available at Indian grocery stores)

  • ½ tsp tamarind & dates chutney (available at Indian grocery stores)

  • Himalayan pink salt or table salt (to taste)

  • Fresh cracked black pepper (to taste)

Instructions

  1. Take frozen or fresh corn. If using frozen, microwave it with room temperature water in a microwave-safe bowl for around 4 minutes. Ensure the corn is fully submerged in water.

  2. Dice cherry tomatoes, onions, cucumbers, and red bell peppers into similar-sized pieces as the corn. Combine in a large bowl.

  3. Once corn is done, run it under cold water to cool.

  4. Add cooled sweet corn to the bowl with diced vegetables.

  5. Add chopped cilantro, cumin powder, chaat masala, and tamarind & dates chutney. Mix well.

  6. Taste, then add salt and black pepper accordingly, since chaat masala and chutney add saltiness and spice.

  7. Mix thoroughly. Add lime juice if you prefer more tang.

  8. Serve immediately!

Notes

  • You can add boiled chickpeas or sprouts to make this salad more filling.

  • You can make this salad ahead of time and keep it in the fridge, but add the spices and sauces just before serving—otherwise the salad can get soggy.
