Puffed Quinoa Snack

Think of this as a healthier, crunchier twist on Indian bhel. Instead of puffed rice, we are using puffed quinoa—light, nutty, and full of protein. Tossed with warm spices, fresh veggies, and a squeeze of lemon, this snack comes together in minutes and delivers that irresistible chatpata flavor in every bite.

Serves 2 people

Prep Time: 15 minutes

Ingredients

  • 1½ cups puffed quinoa

  • ¼ cup onions, diced

  • ⅓ cup cucumber, diced

  • Oil spray (such as avocado oil)

  • 1 tsp chaat masala

  • ¾ tsp Kashmiri red chilli powder

  • ½ tsp pink salt

  • Crushed black pepper, to taste

  • 1 tbsp cilantro, chopped

  • ½ tsp lemon juice

Instructions

  1. Heat a large pan on medium heat. Once hot, add the puffed quinoa.

  2. Toast the quinoa for 5–6 minutes, stirring constantly to avoid burning.

  3. Lower the heat and spray generously with oil to help the spices stick.

  4. Add chaat masala and Kashmiri red chilli powder, and toss until the quinoa is evenly coated.

  5. Transfer to a wide plate and let it cool completely.

  6. Once cooled, add onions, cucumber, cilantro, salt, black pepper, and lemon juice.

  7. Mix well and serve immediately for the best crunch.

Notes

  • This snack is inspired by Indian bhel, but uses puffed quinoa for a light and protein-rich twist.

  • Best enjoyed fresh. If prepping in advance, keep the toasted quinoa and chopped veggies separate and mix just before serving.
